We stick to traditional udon-making techniques by kneading our dough right in the kitchen on a daily basis to offer freshly-made udon noodles.
Our broth is prepared Kansai-style using aromatic dried bonito and select ingredients to create a well-balanced yet light flavor.

Flavorful House-Made Noodles

Here at Iyo Seimen, we stick to the authentic taste of Sanuki udon by using carefully selected ingredients, along with our unique blend of meticulously selected safe, quality flour.
In addition, to offer freshly-kneaded and -boiled udon noodles, noodles are kneaded using a noodle-making machine right in the kitchen. Our fresh udon noodles made daily in our kitchen boast the satisfying combination of firmness and elasticity unique to Sanuki udon, as well as their succulent and chewy texture, creating the excellent sensation of noodles going down the throat.

Carefully-prepared special broth to bring out natural flavors

Our broth has a delightful light flavor, which is prepared Kansai-style using only selected ingredients, such as dried bonito and kelp.
Enhanced with natural flavors, the taste is simple yet pleasing, and it can be enjoyed by anyone, whether you prefer a lighter or richer taste.

The development of original design bowls and a restaurant's atmosphere embraced with warm hospitality.

Our noodles are served in a modern bowl designed in black and red. By using our original design bowls, instead of an ordinary udon bowl, we would like to welcome our guests with the spirit of hospitality while offering delectable dishes.
The design of the bowl also gives an accent to the restaurant's dark brown-themed interior.
In addition, to entertain our customers with a view of the open kitchen, the kitchen is located in the center, which is surrounded with various types of seats, including Japanese-style horigotatsu, tables and chairs, as well as counter sitting with dividers, creating a relaxed atmosphere where customers can relax and enjoy the traditional taste of udon noodles.
