At each location of Iyo Seimen, where the staff in their 20s to 50s work together while maintaining good communication internally, we have set our goal to expand nationwide to offer the classic taste of authentic Sanuki udon to as many people as possible.

- A comprehensive range of responsibilities is given to our staff, from dough-kneading to the preparation of side menus.
- The staff is given wide ranging responsibilities in the kitchen, including the daily preparation of ingredients before hours, noodle kneading using a noodle-making machine, boiling of noodles and the preparation of side dishes, such as tempura and rice balls.
Our training staff teaches everything from the basics using our original operation manual, ensuring even inexperienced staff can fully learn each task in small steps.
The aim is to work in a team setting while maintaining good communication with other staff.
